Clean all vegetables. Peel carrots and string the snow peas. Julianne cut all ingredients except for bean sprouts.
In a heated wok, add ginger and oil. Add shitake mushrooms and vegi ham. Stir until fragrant. Add water, salt, sugar, kelp (or mushroom) seasoning, chili pepper.
Add bean sprouts and chili pepper, stir. Add snow peas, stir, add carrots, stir and serve.
