Soak goji berry. Blanch oyster mushrooms and celery. Remove celery strings and cut into 1” diagonal chunks. Cut pineapple into similar sizes.
In a heated wok, add vegetable oil and ginger slices. Stir until fragrant. Add ginko nuts. Add oyster mushrooms. Stir. Add pineapples and some water as needed. Allow to simmer.
Add sugar, salt, mushroom seasoning and celery. Thicken sauce with potato starch solution. Add goji and half-and-half. Bring to boil and serve.
