Cut ingredients into similar sizes. Deep fry gluten.
In a heated wok with oil, add ginger, soy sauce, mirin sweet cooking seasoning, salt, sugar, water and gluten. Allow to simmer. Add carrots, bamboo fungus, bamboo shoots, straw mushroom, zucchini, and golden needle mushroom. Stir. Add potato starch mixed in water to thicken sauce. Add sesame oil and serve.
