Clean the tomatoes and basil leaves. Place tomatoes, basil leaves, and parmesan cheese in a blender. Slowly add extra virgin olive oil and pulse the blender. The finished sauce should be chunky. Add salt, sugar (or melted rock crystal syrup) and pepper to taste.
Bring water to boil and season water with oil and salt. Cook the angel hair pasta as directed. Drain and mix with sauce. Add mozzarella cheese. Place in serving bowl and garnish with basil and grated parmesan cheese.
