onFilling: mince carrots, celery, and shiitake mushroom (pre soaked). Blend all ingredients listed except bitter melon. Season with salt, sugar, mushroom seasoning and white pepper.
Cut bitter melon into 1” rings and remove the center content. Blanch. Generously powder the inside and outside of the bitter melon with potato starch. Stuff tightly with the filling.
Deep fry the bitter melon until golden. Transfer into the steamer and steam until cooked.
Sauce: Boil water, add sugar, mushroom seasoning, salt, potato starch (pre-dissolved in water) to thicken, sesame oil and goji berry. Pour on top of the steamed bitter melon and serve.
